Who Wants Egg Bake for Dinner?

It’s a crazy week with work, summer camps, graduation parties, family in town and our wedding anniversary! <I’m already tired thinking about it all>

So today when I was sitting in the parking lot waiting to pick up my daughter from camp – while being on a conference call – it occurred to me that the fancy quiche I was planning (and promised) for dinner wasn’t going to work out.

Why? Because yesterday I forgot that my daughter had Ninja Warrior class, so the make-up class is today from 4:30-5:30pm, which means I won’t get home until closer to 6 and if I stick with the planned quiche we aren’t eating until 7pm.

That’s not going to work because kids need showers, I need to finish up work emails, get the house picked up, lunch needs to be made and bags packed for Day 3 of camp tomorrow…

So when we walked in the door at 2:15pm after camp today, I got to work on cleaning the kitchen and prepping an improvised ‘egg bake’? No crust, not in a pie pan and not as pretty as I’d hoped dinner would be. But nonetheless, it was prepped and I put it in the oven for 25 minutes to cook 75% of the way through. Put the lid on the dish and I’ll toss it in the oven after ninja class to cook the rest of the way. We should be eating by 6:30pm. <Famous last words of a busy mom>

Barto’s Basic Egg Bake Dinner Loaf

1 glass loaf pan – sprayed with avocado oil

9 eggs cracked and whisked into the loaf pan.

Sautee grated zucchini, diced ham (I had left over from homemade pizza night), chopped mushrooms (left over from last night’s stir fry), and Kinder SPG seasoning.

Add sauteed veggies and meat to loaf pan and drop in chunks of my very favorite cooking hack – Boursin Cheese! Measure with your heart, friends.

Stick in the over at 350 degrees for 35ish minutes.

Oh – I added some tomatoes on top which will roast up when I stick it back in the oven to finish cooking πŸ™‚

Anyway…………. Since I’ve accepted that basic tastes just as good as fancy, I’ve been able to be a little more creative in the kitchen and let myself off the hook of perfection.

This was quick.

This was doable.

This was acceptable.

The family will be happy.

And I will have kept my sanity.
